  1. Preheat oven to 375 degrees
  2. Spray muffin pan with olive oil
  3. Mix all ingredients in a large bowl
  4. Roll the mixture into balls (about the size of a racquet ball) and place in muffin pan.
  5. Bake for 40 minutes. **You can also cook these on the stovetop in a pan with a little bit of olive oil. The meatballs are great with zucchini noodles and pasta sauce.
