Classy Chicken

  1. Preheat the oven to 400 F.
  2. Whisk miso and coconut milk together until miso is completely dissolved.
  3. Preheat a nonstick frying pan on medium heat and lightly coat with spray.
  4. Add the chicken (in batches is necessary) and sauté until lightly browned on both sides. Transfer to a large casserole dish.
  5. Return pan to medium heat and re-spray pan if needed.
  6. Add the red pepper, onion, garlic, curry powder and cumin, and sauté for one minute.
  7. Add miso mixture, peach, broccoli, asparagus, and sauted vegetables to casserole dish. Evenly top with grated cheese.
  8. Place in the oven and bake for twenty-five minutes or until the cheese is lightly browned.
